1. Gluten
Cereals containing gluten (wheat, rye, barley, oats, spelt, kamut and their derivatives). Present in bread, pasta, pizza, biscuits, beer and many processed products.

2. Crustaceans
Both marine and freshwater crustaceans (prawns, shrimps, langoustines, lobsters, crayfish, etc.)

3. Eggs
All foods containing eggs, even in minimal quantities, whether cooked or raw (mayonnaise, emulsifiers, egg pasta, sweet and savoury doughs, creams, ice creams, etc.)

4. Fish
All types of fish and derived products (including fish gelatine, with rare exceptions)

5. Peanuts
Peanuts, derived products or those containing them as ingredients (peanut oil, peanut butter, peanut flour, creams and snacks)

6. Soybeans
Soybeans, derivatives and products containing this ingredient (with the exception of some derivatives, including refined soybean oils and fats)

7. Milk
Milk, derivatives and products generally containing lactose (with the exception of whey used in the manufacture of alcoholic distillates)

8. Tree Nuts
Pistachios, almonds, hazelnuts, walnuts and all varieties of tree nuts, derivatives and products containing these ingredients

9. Celery
Present as an ingredient, even in minimal quantities, or in derived products (stocks, soup preparations, sauces and vegetable concentrates)

10. Mustard
Mustard and mustard products, present as an ingredient, even in minimal quantities, or in derived products

11. Sesame
Both as whole seeds (e.g. to coat bread and biscuits) and as an ingredient or derivative, present even in minimal traces (sometimes blended into flours and condiments)

12. Sulphur Dioxide and Sulphites
In concentrations above 10 mg/kg or 10 mg/l (generally present as preservatives in canned fish products, pickled goods, products in oil or brine, jams, vinegar, dried mushrooms, soft drinks, fruit juices, etc.)

13. Lupin
Present as an ingredient, even in minimal quantities, or in derived products (due to its high protein content, it is often used in the preparation of vegan products such as vegan burgers, vegan cold cuts, flours and similar)
